TORTINI DI LENTICCHIE SU PANE AZZIMO MORBIDO CON QUENELLE DI CAPRINO E SPINACI - LENTILS PIES ON SOFT UNLEAVENED BREAD WITH SPINACH AND VEG GOAT CHEESE QUENELLES

Ecco un altro secondo piatto proteico e gustoso che può sostituire molto bene la carne.
Meglio se lo accompagnate ad altre verdure al vapore, stufate o al forno...

Buono anche da arrotolare in un kebab: spalmate sul pane arabo la crema di spinaci e veg-caprino, aggiungete il tortino di lenticchie a pezzetti, della zucca arrosto o delle zucchine alla griglia e qualche erbetta fresca tritata! Spettacolare!

Ingredienti per 8 tortini (4 porzioni):

250 gr di lenticchie bio cotte
1 bicchiere di salsa di pomodoro
sale e pepe q.b.
spezie o erbe fresche (opzionali)

Per le quenelle:
100 gr veg-caprino
150 gr di spinaci bio cotti
sale q.b.

Per decorare:
olio evo, granella di pistacchi
Fare i tortini è molto semplice: frullate le lenticchie precedentemente ammollate e cotte in abbondante acqua non salata con un pezzetto di alga kombu e qualche foglia di alloro (potete usare anche quelle già pronte, cotte al vapore e possibilmente biologiche, sciacquatele sotto l'acqua corrente e scolatele bene).
Aggiungete la salsa di pomodoro per ammorbidire il composto.
L'impasto deve essere sì morbido, ma non troppo fluido; se fosse ancora troppo denso aggiungete pomodoro, in caso contrario pane grattugiato.
Aggiustate di sale e pepe. 
Potete insaporire il tutto con delle spezie, come curry, cumino o paprika dolce, oppure con erbe aromatiche come basilico, prezzemolo o rosmarino. I vegetariani possono aggiungere anche del parmigiano o un altro tipo di formaggio.
Formate i tortini aiutandovi con un coppa pasta, io ne ho usato uno quadrato, ma va bene anche rotondo, oppure formate delle polpette con le mani. Disponeteli sulla placca da forno coperta con la carta forno, un filo di olio evo, e infornate a 200 gradi per 30-35 minuti.

Intanto preparate la crema di veg-caprino e spinaci cotti semplicemente passandoli al mixer e aggiustando di sale.

Componete il piatto: tagliate dei dischi di pane azzimo morbido e fateli scaldare qualche minuto in una padella antiaderente (oppure potreste usare una piadina o del kebab), quindi disponeteli sul fondo del piatti; adagiate due tortini per ogni piatto uno sopra all'altro; con l'aiuto di due cucchiaini create delle piccole quenelle e disponetele a lato; decorate con un filo di olio evo e la granella di pistacchi.

Ingredients for 8 pies (4 servings):

250 gr of organic cooked lentils
1 cup of tomato sauce
salt and pepper q.s.
spices or fresh herbs (optional)

For quenelles:
100 g veg goat cheese
150 gr of organic cooked spinach
salt q.s.

To decorate :
extra virgin olive oil, chopped pistachios

Make the patties is very simple: blend the lentils previously soaked and cooked in plenty of unsalted water with a piece of kombu seaweed and a few bay leaves (you can also use the ready ones, steamed and possibly organic, rinse under water and drain well).
Add the tomato sauce to soften the mixture.
The dough should be soft, but not too thin: if it was still too thick, add tomato, otherwise breadcrumbs.
Season with salt and pepper.
You can flavor it with some spices, such as curry, cumin or paprika, or with herbs such as basil, parsley or rosemary. Vegetarians can also add Parmesan or another type of cheese .
Form pies with the aid of a pastry ring, I've used a square one, but that's okay too if you have the round set, or formed balls by hands. Arrange on baking sheet covered with waxed paper, add a drizzle of extra virgin olive oil and bake at 200 degrees for 30-35 minutes.

Meanwhile, prepare the cream of veg goat cheese and cooked spinach simply passing them to the blender and season with salt.

Assemble the dish: cut discs of soft unleavened bread and let them warm up a few minutes in a pan (or you could use piadina bread or kebab), then arrange them on the bottom of dishes; lying two lentils pies for each dish; with the help of two teaspoons created small quenelles and place to the side; decorated with a drizzle of olive oil and chopped pistachios.
