PANDISPAGNA

Ingredienti:

300 gr di farina 0
150 gr di zucchero di canna grezzo chiaro
18 gr di cremor tartaro
15 gr di bicarbonato
2 limoni, solo la scorza
200 gr di latte vegetale
140 gr di olio di semi

Riducete lo zucchero a velo.
Aggiungete ora tutti gli ingredienti secchi: farina setacciata, lievito, bicarbonato e scorze di limone grattugiate.
A parte frullate con il minipimer l’olio e il latte, quindi aggiungetelo alle farine.
Mescolate bene finchè otterrete un impasto fluido e liscio.
Cuocete per 30 minuti a 180 gradi.

Ingredients:

300 gr white flour
150 gr icing light brown sugar
18 gr cream of tartar
15 gr baking soda
2 lemons, zest only
200 gr vegetable milk
140 gr seeds oil

Mix all the dry ingredients: icing sugar, flour, baking powder, baking soda and grated lemon zest.
Blend oil and milk, then add to the flour.
Mix well until you get a  fluid and smooth dough.
Bake for 30 minutes at 180 degrees.

PASTA FROLLA

Ingredienti per una tortiera da 24-26 cm:

350 gr di farina semi integrale
150 gr di zucchero di canna grezzo
95 gr di olio di semi
95 gr di acqua
1/2 cucchiaino di cremor tartaro
1/2 limone, la scorza

Impastate prima gli elementi secchi.
A parte fate una "maionese" con acqua e olio frullandoli con un minipimer, aggiungetela quindi all'impasto, lavoratelo qualche minuto, avvolgetelo nella pellicola e lasciate riposare in frigo almeno un'ora in modo che la farina assorba bene tutti i liquidi.
Stendete poi l'impasto con uno spessore di circa 3/4 mm e farcite a piacere :)
Se vi avanzano i ritagli potete fare le classiche strisce incrociate.
Cuocete per 30-35 minuti a 180 gradi.

Ingredients for a 24-26 cm pan:

1/2 teaspoon cream of tartar

Mix all the dry elements.
Apart do a "mayonnaise" with water and oil whisking them together with a blender, then add it to the dough, knead a few minutes, wrap it in plastic wrap and let stand in refrigerator at least an hour so that the flour absorbs well all liquids.
Then roll out the dough with a thickness of about 3/4 mm and fill to taste with your favorite jam :)
Bake for 30-35 minutes at 180 degrees.

PASTA BRISEE


300 gr di farina di farro
80 gr di olio evo
100 gr di vino bianco (o acqua frizzante)
1 pizzico di sale

Preparate la briseè impastando tutti gli ingredienti. Formate una palla liscia ed elastica, copritela con la pellicola e lasciatela riposare almeno 1 ora.
Poi stendete la pasta con un mattarello tra due fogli di cartaforno.
Ungete ed infarinate uno stampo per torte.
Adagiate la sfoglia all’interno e tagliate gli eccessi di pasta. Con questi formate delle strisce che vi serviranno alla fine per decorare la torta.

Riempite la torta con il ripieno che preferite, infornate per 40 minuti a 180 gradi.

300 g spelt flour
80 gr extra virgin olive oil
100 gr white wine (or sparkling water)
1 pinch of salt

Prepare the pastry by mixing all the ingredients. Form a smooth and elastic ball, cover with plastic wrap and let rest at least 1 hour.
Then roll out the dough with a rolling pin between two sheets of baking paper.
Oil and flour a mold.
Put the dough inside and cut the excesses and make some stripes to decorate the cake.

Fill the pie with the ingredients you prefer, bake for 40 minutes at 180 degrees.

LATTE DI SOIA - SOY MILK


Ingredienti:
500 gr di soia gialla secca
5 lt di acqua
aromi (facoltativi)

Lasciate la soia in ammollo per 24 ore in abbondante acqua fredda in modo che si ammorbidisca.
Scolate, sciacquate e frullate al mixer con qualche mestolo di acqua calda finché diventerà una crema.
Intanto scaldate l'acqua in una pentola capiente, quando bolle versateci la soia tritata, quindi cuocete per 15-20 minuti a fuoco basso mescolando spesso, facendo attenzione perché tenderà a formarsi molta schiuma e ad uscire.
A questo punto filtrate il liquido ottenuto versandolo in una garza, un panno di cotone o di lino bianco. Strizzate bene il panno come se faceste una mungitura ;)
Quello che colerà sarà il nostro latte, quello che invece rimarrà nella garza è l'okara (potete eventualmente surgelarla ed utilizzarla in un secondo momento).

Il latte dura in frigorifero una settimana. Potete usarlo per fare besciamella, formaggio, yogurt, dolci e biscotti... Insomma ovunque!

Se siete abituati a berlo a colazione o a merenda, potrete aromatizzarne una parte con una stecca di vaniglia lasciata almeno un ora in infusione e dolcificare con sciroppo d'agave o zucchero di canna grezzo.

Ingredients to get 4 lt of soy milk:

500 gr of dried yellow soy
5 lt of water
flavorings (optional)

Let the soy soak for 24 hours in cold water until it becomes soft.

Drain, rinse and blend with a ladle of hot water until it becomes a paste.

Meanwhile heat the water into a big pot, when it boils pour the soy paste, then simmer for 15-20 minutes on low heat, stirring often and paying attention because they tend to form a lot of froth and get out.

At this point, strain the liquid obtained by pouring it into a gauze, a white cotton or linen cloth.
Wring the cloth as if you are milking ;)
Here you are your soy milk; what remain in the cloth is the okara (you can possibly freeze it and use it at a later time).

The milk lasts a week in the fridge.
You can use it to make bechamel, cheese, yogurt, cakes and biscuits ... I mean everywhere!


If you are used to drinking it for breakfast or as a snack, you can flavor a part with a vanilla bean left at least one hour in infusion and than sweeten with agave syrup or brown sugar.

COMPOSTA DI PESCHE - PEACHES JAM

Ingredienti:

1 kg di pesche bio senza nocciolo (potete lasciare la pelle)
buccia di 2 mele bio
il bianco (albedo) di 1 limone bio
300 gr di zucchero di canna grezzo (dipende da quanto è dolce la frutta di base)

Pulite e tagliate in pezzi le pesche, mettetele in una pentola capiente dai bordi alti, aggiungete lo zucchero di canna, la buccia di mela tagliata fine e l'albedo del limone intero (buccia di mela e albedo contengono pectina, cioè un gelatificante naturale che accorcia i tempi di cottura, così non dovrete usare la pectina chimica industriale).
Cuocete a fuoco basso, mescolando spesso, per 50 minuti, coprendo la pentola con una retina di metallo (sobbollendo schizza molto!).
A fine cottura, se preferite, potete frullare il tutto con un minipimer; in questo caso potete lasciare il bianco del limone, tanto verrà sminuzzato, se invece preferite la composta con i pezzi di frutta, toglietelo, tanto la sua funzione l'ha già svolta :)
Nel frattempo sterilizzate dei vasetti mettendoli in una grande pentola e facendoli bollire per 30 minuti.
Riempiteli con la composta calda fino all'orlo (usate un guanto da cucina per non scottarvi ed un mestolino), chiudete bene il tappo, quindi lasciateli raffreddare capovolti affinché si formi il sottovuoto (il tappo non deve più fare clic clac).

Ingredients:

1 kg of organic peaches (you can leave the skin)
peel of 2 organic apples 
white part of 1 organic lemon
300 gr of brown sugar (depending on how sweet the fruit is)

Clean and cut the peaches into pieces, put them in a large pot with high sides, add the brown sugar, apple peel finely chopped and the white part of the lemon (apple peel and this white part contain pectin, which is a natural gelatificator that shortens the cooking time, so you don't need to use chemical pectin).
Cook over low heat, stirring often, for 50 minutes, covering the pan with a metal mesh (simmering, squirts a lot!).
At the end of cooking, if you prefer, you can blend all together, in that case you can leave the white part of the lemon that will be shredded; if you prefer a jam ​​with pieces of fruit, remove it, its function has already turning :)
Meanwhile sterilize the jars by placing them in a large pot and boil them for 30 minutes.
Fill them with the hot jam (use an oven mitt to avoid scalds and a little ladle), close with the caps, then let cool upside down so that the vacuum is formed (the cap does not have to do click click).

VEG-CAPRINO - VEG-GOAT CHEESE

Ingredienti per 100 gr di formaggio:

250 gr di yougurt di soia naturale bio
il succo di mezzo limone bio
una presa di sale
una garza, un contenitore alto e stretto, uno spago, un bastoncino

Niente di più semplice: condite lo yogurt con sale e limone, mescolate bene, quindi trasferitelo nella garza, fate un fagotto, chiudetelo con lo spago e, con l'aiuto di un bastoncino (tipo quelli da sushi) "appendetelo" all'interno del bicchiere alto in modo che il siero coli giù senza problemi.
Tenete tutto in frigo per 12 ore e il gioco è fatto!
Il risultato è un formaggio morbido, spalmabile, dal gusto un pochino acido, proprio come un vero caprino. Se lo preferite più delicato mettete meno limone!

Ingredients for 100 gr of cheese:

250 gr of organic natural soy yogurt
the juice of 1/2 organic lemon
a pinch of salt
a gauze, a tall and narrow container, a piece of string, a stick

Nothing more simple:  season yogurt with salt and lemon juice, stir well, then transfer it into the gauze, make a bundle, close it with string and, with the help of a stick (like those for sushi) "hang" inside of the tall glass so the serum strain down smoothly.
Keep in the fridge for 12 hours and you're done!

The result is a soft creamy cheese, it tastes a little sour, just like a real goat. 
If you prefer more delicate put less lemon!

Ingredienti:

75 gr di olio evo
120 gr di farina di riso
1 litro e mezzo di latte di soia
un pizzico di sale 

Scaldate l'olio extra vergine d'oliva senza farlo friggere, aggiungete la farina di riso e tostatela mescolando con una frusta, poi lentamente aggiungete il latte di soia stando attenti a sciogliere tutti i grumi, cuocete a fuoco moderato finchè non raggiunge la consistenza di una crema, aggiustate di sale, e il gioco è fatto!
Se non siete riusciti a sciogliere i grumi frullate la crema con il minipimer.
Più facile di quello che si pensi!
Io in genere la faccio con dosi un pò diverse e funziona lo stesso, eccole qui:

50 gr di olio evo
50 gr di farina (zero o di riso)
500 ml di latte di soia
un pizzico di sale
un pizzico di noce moscata

Il procedimento è simile, solo che io scaldato l'olio, lo tolgo dal fuoco e aggiungo la farina sempre mescolando con una frusta. Dato che, evidentemente, metto in proporzione più olio, il risultato è un rou più morbido, ed è più difficile che si creino grumi. Poi aggiungo il latte di soia e rimetto la pentola sul fuoco finchè la crema si addensa (più la lasciate sul fuoco più diventa densa, se lo diventa troppo allungatela un pochino con del brodo vegetale caldo).
Se vi servono dosi maggiori ovviamente raddoppiate gli ingredienti...

Ingredients:

75 gr of extra virgin olive oil
120 gr of rice flour
1 liter and a half of soy milk
a pinch of salt

Heat the extra virgin olive oil without frying it, add the rice flour and toast it stirring with a whisk, then slowly add the soy milk being careful to dissolve any lumps, cook over moderate heat until it reaches the consistency of a cream, salt to taste, and you're done!
If you failed to dissolve clots whisk them with a blender.
Easier than you think!
I generally do with a little different doses and it works the same, here they are:

50 gr of extra virgin olive oil
50 gr of flour (zero or rice)
500 ml of soy milk
a pinch of salt
a pinch of nutmeg

The process is similar, except that I heated the oil, I remove it from the heat and add the flour, stirring constantly with a whisk. Since, evidently, I put proportionately more oil, the result is a softer rou, and it's more difficult to create lumps. Then add the soy milk and remit the pot on the fire until the cream thickens (more you left it on the fire more it becomes dense, if it becomes too thick, stretch it a bit with a hot vegetable stock) .
If you need higher doses obviously doubled the ingredients...

Fare il pane è più veloce e semplice di quanto si pensi, vi do una ricetta base:

500 gr di farina (integrale o di farro o di segale o di riso o quella che volete o anche tutte insieme)
1 bustina di lievito secco
2 cucchiai di olio d'oliva
280 ml di acqua tiepida (in cui sciogliere il lievito di birra)
1 cucchiaino di sale
semini vari (zucca, lino, sesamo...)



Basta mescolare tutti gli ingredienti (prima quelli secchi, poi i liquidi), impastarli per 10 minuti (a mano, se invece avete una planetaria beati voi!) e poi lasciare lievitare l'impasto in una ciotola coperta con la carta pellicola nel forno spento ma chiuso per almeno 2/3 ore.
Poi è bene rimpastarlo di nuovo e lasciarlo di nuovo lievitare per qualche ora, sempre coperto e sempre nel forno chiuso (in generale più lievita meglio è, magari preparatelo la sera, la mattina appena svegli lo infornate e prima di uscire di casa per andare al lavoro sarà pronto).
Io faccio sempre un unico pagnottone e lo cuocio nello stampo da plumcake perchè mi piace il pane a fette e perchè dura di più... 
Se preferite però potete fare dei piccoli panini, aggiungere le noci oppure le uvette o le olive, e poi cuocerli.
Nel caso del pagnottone ci vogliono circa 25-30 minuti a 200 gradi nel forno non ventilato, per panini più piccoli ovviamente riducete i tempi!
Per conservarlo poi lo avvolgo in uno strofinaccio e il giorno dopo lo metto anche in un sacchetto per surgelare gli alimenti per evitare che si secchi troppo.

Ingredients:

500 grams of flour (wholemeal or spelt or rye or rice or the one you want or even all together)
1 packet of dry yeast
2 tablespoons of olive oil
280 ml of warm water (in which dissolve the yeast)
1 teaspoon of salt
various seeds ( pumpkin , flax, sesame ... )

Simply mix all ingredients (dried ones first, then the liquid), knead for 10 minutes (I mean by hand, but if you have a planetary, lucky you!), then let the dough rise in a bowl covered with foil paper in the closed oven for 2/3 hours.
Then it's good to mix it again and let it rise again for a few hours, always covered and always in the closed oven (generally more rises better it is, maybe prepare it in the evening, when you wake up in the morning bake it, before you leave home to go to work, it will be ready).
I always do a single big pagnottone and bake it in the plumcake pan because I like sliced ​​bread and why it lasts longer ...
If you prefer, however, you can make small sandwiches, add nuts or raisins or olives, and then cook them.
In the case of pagnottone it takes about 25-30 minutes at 200 degrees in not vented oven, for smaller pieces obviously reduce the times!
To preserve it fresh, I usually wrap it in a towel and the next day I put it in a bag to freeze food to prevent it from drying out too much.

Ingredienti per 4 porzioni:

200 gr di farina integrale di farro bio
100 gr di farina integrale bio
50 gr di farina di grano duro bio
170 ml di acqua tiepida
1 cucchiaino di sale

In una ciotola capiente impastate per 5-10 minuti le farine con le mani, il sale e l'acqua fino ad ottenere una palla morbida e compatta, abbastanza elastica e non appiccicosa.
Mettete la palla di pasta in frigo per almeno mezz'ora coperta con la pellicola.
Quando si sarà rassodata la possiamo stendere.
Prendetene delle piccole porzioni e fatela passare tra i rulli dell'apposita macchina ripiegandola su se stessa più volte in modo da ottenere delle strisce larghe più o meno 15 centimetri (abbassate lo spessore progressivamente fino ad arrivare a 4, ovvio che potete farle anche più fini o più spesse, a vostro gusto).

Disponete le lasagne su un piano, spolveratele di farina, se no si attaccheranno, quindi, disteso uno primo strato, coprite con un canovaccio o della carta forno e fate gli altri strati, sempre spolverando di farina.
Stesa tutta la pasta, tagliatela a strisce per ottenere le vostre tagliatelle: senza schiacciarle troppo arrotolate su se stesse le falde di pasta (come una girella, per intendersi) e tagliatele a strisce più o meno larghe (scegliete voi se preferite larghe pappardelle o sottili tagliolini).
In realtà la macchina per la pasta, in genere, ha almeno un paio di rulli trafilati: passando le strisce tra questi otterrete tagliatelle perfette.

Una volta ottenute le tagliatelle disponetele su un vassoio con tanta farina sempre per non farle attaccare.

Ingredients for 4 servings:

200 gr wholemeal organic spelled flour
100 gr of wholemeal organic flour
50 gr of durum wheat organic flour
170 ml of warm water
1 teaspoon of salt

In a large bowl mix together the flours for 5-10 minutes by hands, add salt and water to make a soft compact ball, fairly elastic and not sticky.
Place the dough in the fridge for at least half an hour covered with plastic foil.
When it is firmed we can stretch out.
Take a small portions and allow it to pass several times between the rollers of the machine in order to obtain more or less strips of 15 cm wide (decrease the thickness gradually until reaching #4, obvious that you can make them even finer or thicker, it's your taste) .

Arrange the lasagna on a worktop, sprinkle with flour, otherwise it will attack each other, then, lying one first layer, cover with a cloth or with waxed paper and go ahead with the other layers, always dusting of flour.
Stretched all the dough, cut it into strips to get your tagliatelle: without crushing too much, roll up on themselves the flaps of dough and cut into strips more or less wide (you choose if you prefer thin tagliatelle or wide pappardelle).
The pasta's machine, in general, has at least a pair of rollers drawn: pass the strips between these and your tagliatellas will get out perfect.

Once you have the cutted pasta, arrange it on a tray with flour to prevent them from sticking.
Cook it in a boiling salted water for 5 minutes.

Ingredienti:

200 gr di latte di soia bio (Provamel o Sojasun)
260 gr di olio di semi o di vinacciolo bio
40 gr di olio evo (facoltativo)
1 limone, succo
sale q.b.

Con un minipimer, muovendolo dall'alto verso il basso, iniziate a frullate il latte con il limone e il sale, quindi aggiungete l'olio a filo, sempre muovendo il minipimer in verticale cercando di incorporare aria.
Nel giro di pochissimo tempo la maionese sarà densa al punto giusto.
Meno olio mettete più resterà fluida, dipende dai gusti e dall'uso che dovrete farne.
Potete anche aromatizzarla e colorarla con erbe fresche come basilico o prezzemolo, oppure con zafferano, curcuma o altre spezie.

Ingredients:

200 gr of organic soy milk (Provamel on Sojasun)
260 gr of organic corn or grapeseed oil
40 gr of extra virgin olive oil (optional)
1 lemon, juice
salt q.s.

With a blender, moving from top to bottom, start to whisk the milk with the lemon and salt, then add slowly the oil, always moving the blender in vertical, trying to incorporate air.
Within a very short time the mayonnaise will be dense.
Less oil will mean a more fluid cream, depends on the tastes and the use that you make of it.
You can also spice it up and colour it with fresh herbs such as basil or parsley, or with saffron, turmeric or other spices.

Ingredienti:

Pomodori secchi
1 cucchiaio di aceto
capperi, pepe nero in grani
foglie di alloro
sale q.b.
olio evo q.b.

Fate rinvenire i pomodori bollendoli qualche minuto in acqua e aceto, scolateli, asciugateli e metterli nei vasetti ben pigiati con alloro, pepe, capperi (o altri profumi a scelta), sale e olio extravergine di oliva.
Chiusi, se tenuti in luogo buio e asciutto, durano un paio di mesi; una volta aperti meglio conservarli in frigorifero.

Ingredients:

dried tomatoes
1 tablespoon of vinegar
capers and black peppercorns
bay leaves
salt q.s.
extra virgin olive oil q.s.

Soften the tomatoes a few minutes boiling them in water and vinegar, drain, dry well and put them crushed in jars with bay leaves, pepper, capers (or other scents you like), salt and extra virgin olive oil.
Closed, if kept in dark and dry place, they last a couple of months; once opened better to store in the refrigerator.
