RISO BICOLORE CON SPINACI, CECI E GRANELLA DI PISTACCHI - TWO-TONE RICEWITH SPINACH, CHICKPEAS AND PISTACHIOS GRAIN

Ricetta salutare, saporita, leggera e ricca di tanti principi nutritivi :)

Ingredienti per 4 porzioni:

150 gr di riso semintegrale
150 gr di riso venere
250 gr di ceci cotti bio
200 gr di spinaci cotti bio
3-4 cucchiai di olio evo
1 cucchiaino di curry dolce
peperoncino fresco
30 gr di pistacchi
sale q.b.

Lasciate i ceci in ammollo per 12 ore, quindi cuoceteli per 1 ora e mezza in abbondante acqua non salata con qualche foglia di alloro e un pezzetto di alga kombu.
Lavate, pulite e lessate gli spinaci in una pentola capiente: non serve aggiungere acqua, basterà quella che sarà rimasta tra le foglie dopo il lavaggio. Cuocete per circa 10-15 minuti con il coperchio a fuoco basso.
Scolateli, strizzateli bene e fateli raffreddare.

Lessate i due tipi di riso separatamente secondo i rispettivi tempi di cottura. Salate solo alla fine.

Sgusciate e tritate i pistacchi.

Scaldate l'olio extravergine di oliva in una pentola dai bordi alti, aggiungete i ceci e gli spinaci, fateli saltare a fuoco vivace per qualche minuto, aggiungete il curry e il peperoncino e aggiustate di sale.

Unite alle verdure il riso nero e quello bianco, mescolate bene in modo che si insaporisca bene, quindi servite nei piatti usando una tazza come formina.
Terminate con la granella di pistacchi e un filo di olio!

Ingredients for 4 servings:

150 gr of rice wholemeal
150 gr of black rice
250 gr of cooked chickpeas
200 gr of cooked spinach
3-4 tablespoons of extra virgin olive oil
1 teaspoon of sweet curry
fresh chilli
30 gr of pistachios
salt q.s.

Let the chickpeas soak for 12 hours, then cook for 1 ½ hours in plenty of unsalted water with a few bay leaves and a piece of kombu seaweed.
Wash, clean and boil the spinach in a large pot: no need to add water, it will be enough what will be left in the leaves after washing. Cook for about 10-15 minutes with the lid on low heat.
Drain, squeeze well and let cool.

Boil the two types of rice separately according to their cooking times. Add salt only at the end.

Shell and chop pistachios.

Heat the olive oil in a pan with high sides, add the chickpeas and spinach, sauté over high heat for a few minutes, add the curry and chili pepper and salt to taste.

Add the two types of rice to the vegetables, mix to marinate them well, then serve with the help of a cup as a mould.
Finish with chopped pistachios and a drizzle of olive oil!
