ORECCHIETTE CON RAGU' DI CIPOLLA E CAROTE SU CREMA DI CAVOLO NERO - ORECCHIETTE WITH ONION AND CARROTS RAGOUT ON BLACK KALE CREAM

Cos'è il cavolo nero?
E' una varietà di cavolo, ovviamente, ma senza gemma centrale (viene chiamato anche cavolo senza testa, povero lui!), quindi è formato solo da lunghe foglie verde scuro dalla superficie bollosa.

Come tutti i cavoli è ricco di ferro, fibre, calcio e acidi grassi Omega 3 e Omega 6, è antinfiammatorio, disintossicante, antiossidante, antitumorale, aiuta ad abbassare la pressione e a proteggere cuore e arterie.
Quindi in inverno cavoli e ancora cavoli! Eccheccavolo!

Si usa in genere per fare la famosa ribollita toscana, ma è buonissimo in altre mille ricette.
Quindi oggi si è trasformato in crema gustosa perfetta per condire le orecchiette di grano duro :)

Ingredienti per 2 porzioni:

200 gr di orecchiette
250 gr di cavolo nero bio
3 cucchiai di crema di riso (o panna vegetale)
2 cucchiai di olio evo
2 carote bio
1/2 cipolla rossa bio
sale e pepe q.b.

Lavate le foglie di cavolo, togliete la prima parte di gambo, tagliatele grossolanamente e cuocetele in abbondante acqua leggermente salata per 10-15 minuti.
Scolatele, poi mettetele per qualche minuto in una ciotola con acqua fredda e ghiaccio in modo che il loro colore e le proprietà nutritive restino più integre possibile (questo passaggio non è obbligatorio, ma è una buona abitudine ogni volta che si sbollentano delle verdure).
A questo punto strizzate il cavolo cotto, mettetelo in un contenitore alto e stretto, aggiungete la crema di riso (o la panna vegetale o anche nulla), un goccio di olio extra vergine di oliva, sale, pepe e 1-2 cucchiai di acqua di cottura e frullatelo con il minipimer fino ad ottenere una crema densa ed omogenea.
Tenete da parte.

Intanto pulite e tagliate a cubetti sia la cipolla che le carote.
Scaldate l'olio evo in una padella capiente, versate le verdure, aggiungete sale e pepe e cuocete a fuoco medio-basso per 10-15 minuti, mescolando spesso.
Meglio non cuocere troppo le carote che dovranno rimanere leggermente croccanti.
Se durante la cottura si asciugano eccessivamente potete aggiungere 1-2 cucchiai di acqua del cavolo.

Cuocete le orecchiette in abbondante acqua salata. Scolate e ripassate in padella con il ragù vegetale.
Servite calde facendo una base con la crema di cavolo, oppure aggiungetela direttamente in padella, mescolate bene e servite con un filo di olio evo.

Buone no!? E anche piuttosto leggere dai!
Potete fare la stessa crema con gli spinaci o le cime di rapa, ed aggiungere o sostituire le cipolle e le carote con altre verdure a piacere, come zucchine o broccoli oppure con dei funghi porcini...

Ingredients for 2 servings: 

200 gr of orecchiette 
250 gr of organic cabbage
3 tablespoons of rice cream (or other vegetable cream) 
2 tablespoons of extra virgin olive oil 
2 organic carrots 
172 organic red onion
salt and pepper q.s. 

Wash the cabbage leaves, remove the first part of the stem, cut them coarsely and cook in plenty of lightly salted water for 10-15 minutes. 
Drain, then place them for a few minutes in a bowl with cold water and ice so that their color and nutritional properties remain intact as much as possible (this step is not mandatory, but is a good habit every time you has to boil the vegetables). 
At this point, squeeze the cooked cabbage, put it in a tall, narrow container, add the cream of rice (or vegetable cream or nothing at all), a dash of extra virgin olive oil, salt, pepper and 1-2 tablespoons of cooking water and blend it until you have a thick and homogeneous cream. 
Set aside. 

Meanwhile, clean and cut into dices the onion and carrots. 
Heat the extra virgin olive oil in a large skillet, pour the vegetables, add salt and pepper and cook over medium-low heat for 10-15 minutes, stirring often. 
Better not to overcook the carrots that will remain slightly crunchy. 
If too dry during cooking you can add 1-2 tablespoons of cabbage water.

Cook the pasta in plenty of salted water. Drain and sauté with vegetable ragout. 
Serve hot with a base of black kale cream, or add it directly in the pan, stir well and serve with a drizzle of extra virgin olive oil. 

Good, isn't it!? And also rather light! 
You can do the same cream with spinach or turnip greens, and add or replace the onions and carrots with other vegetables as desired, such as zucchini or broccoli or with porcini mushrooms...
